Potato Bhajia
| Ingredients |

2 large potatoes
3-4 green chillies crushed
1/2 tsp garlic
1/2 tsp ground cummin
1/4 cup chopped coriander
2 tbsp tamarind sauce OR 3/4 tsp citric acid
2 tbsp dessicated coconut
1 large tomato grated
1 tsp red chilli powder
1 tsp salt
Oil for deep frying
Batter:
1 1/2 cups chana flour
water as needed
2 tbsp chopped coriander
1/2 tsp salt
3/4 tsp baking powder

| Preparation Method |
1. Peel and dice potatoes. Place in a pot and add tomato, salt and red chilli powder. Cook on low heat for 30 minutes until very soft.
2. Remove from heat and mash.
3. Add all other ingredients (except batter ingredients).
4. Check taste and if you like it very sour you can add more tamarind sauce.
5. Make into small round balls.
6. Mix chana flour, coriander, salt, baking powder and enough water to make a thick batter.
7. Heat oil in a frying pan, and when hot, dip balls of potato in batter to coat nicely and then deep fry till golden brown.
8. Drain and serve hot with chutneys.
