Lakshmi Nair recipe: Parippu Payasam

Here’s a delicious Parippu Payasam recipe you can cook in just a few minutes. Ingredients for Parippu Payasam are given below:

Parippu9Cherupayar (200 gm), medium thick milk of coconut (4 cups), Jaggery (400gm), thick milk of coconut (1.5 cup), cashew and coconut slivers (50gm), Ghee (3tbsp)

How to prepare:

Parippu needs to be fried first without using any oil. Fry for 5 or 6 minutes. Now take it off the pan and wash it well when cooled. Later, cook in boiling water.

Take a thick pan of medium size. In it, add jaggery to about a cup of water. Stir to make it melt into the water.Parippu Payasam

Add this jaggery water to the parippu that has been cooked well. Mix well and add 2 tbsp ghee.

Add to this some light coconut milk and boil. When it boils, add all the medium thick coconut milk.

When the syrup starts to become thick, add all the thick coconut milk and stir for about 5 minutes.

In the 1tbsp ghee that remains, fry the cashew and coconut slivers. Pour this on the payasam and serve it hot.
