Lakshmi Nair recipe: Fried Fish Masala Rice
Fried Fish Masala Rice Ingredients:
Boneless fish diced small and square(0.5 kg),
powdered red chilly ( 1tbsp),
Turmeric powder(1/4 tsp), Salt,
Oil (0.5 cup), Kaimari rice(2cup),
Chopped onions (3),
Ginger, Garlic (1.5tbsp) each,
Turmeric, pepper powder(0.25 tsp),
chilly powder (0.5 tsp),
Coriander powder,
Garam masala,
Lemon juice and powdered coriander(1 tsp),
sliced chilly (2),
sliced leaves of Coriander and Mint (0.25 cup)
How to prepare:
Take water in a deep pan. And add rice to cook. Cook. When it is cooked, add salt and drain. Spread the fish piece
s with red chilli-turmeric powder, a pinch of salt and half of lemon juice. Keep for half hour.
Fry the fish oil till brown. Take out of the oil and break fish into pieces. In the remaining fried oil, add ginger- garlic and chilly. Saute well. Add onions and saute till light brown. Add the remaining powders. Saute till it loses raw smell. Reduce to simmer. Add half of chopped coriander and mint leaves.
Add the fish pieces into masala. Add the rice cautiously without breaking rice. Add 1 tbsp of lemon juice. Add remaining coriander and mint leaves. Mix. Turn off and serve garnished with coriander leaves.
